Pineapple Upside-down Cake

Ingredients
  

  • 1/4 c butter
  • 1/3 c honey
  • 5-6 pineapple slices or rings
  • 2 eggs
  • 1/4 c pineapple juice
  • 1/2 c Sucanat
  • 1 c Summers  Sprouted Spelt Flour
  • 1 tsp baking powder

Instructions
 

  • In a 10" fry pan (with an oven-proof handle) melt together: 1/4 cup butter,  1/3 cup honey
  • Stir over medium heat until mixture is bubbly & thick.
  • Turn off heat and arrange in the syrup in the pan:  5-6 pineapple slices or rings
  • In a bowl, whip together:  2 eggs, 1/4 cup pineapple juice
  • Add in and mix well:  1/2 cup sucanat, 1 cup Summers  Sprouted Spelt Flour,  1 tsp. baking powder
  • Gently spread spoonfuls of batter over the pineapple.
  • Bake at 350 degrees for 20+ minutes or until a knife comes out clean.
  • Place on a rack to cool for 10 minutes then invert onto a serving plate.   Great warm or cold!
