In a 10″ fry pan (with an oven-proof handle) melt together:
1/4 cup butter
1/3 cup honey
Stir over medium heat until mixture is bubbly & thick.
Turn off heat and arrange in the syrup in the pan:
5-6 pineapple slices or rings
In a bowl, whip together:
2 eggs
1/4 cup pineapple juice
Add in and mix well:
1/2 cup sucanat
1 cup Summers Sprouted Spelt Flour
1 tsp. baking powder
Gently spread spoonfuls of batter over the pineapple.
Bake at 350 degrees for 20+ minutes or until a knife comes out clean.
Place on a rack to cool for 10 minutes then invert onto a serving plate.
Great warm or cold!
Pineapple Upside-down Cake
