Alex's Blueberry Muffins

Ingredients
  

  • 1/2 c soft butter (or grapeseed oil)
  • 3 eggs
  • 2/3 c Sucanat or Rapadura
  • 1/4 c maple syrup
  • 2 c Summers Sprouted Spelt or Wheat Flour
  • 1 tsp baking powder
  • 6 oz fresh or frozen blueberries

Instructions
 

  • Cream together and let sit until sugar is dissolved: 1/2 c. soft butter (or grapeseed oil, 3 eggs, 2/3 c. Sucanat or Rapadura, 1/4 c. maple syrup
  • Mix in:  2 c. Summers Sprouted Spelt or Wheat Flour, 1 tsp. baking powder
  • Add: 6 oz. fresh or frozen blueberries
  • Batter will be soft but stiff.  Fill muffin cups 3/4 full.
  • Bake at 350 for 20-25 minutes.
