Preheat oven to 350 degrees.
Rub butter over bottom and sides of 8 x8 pan.
Peel, slice, and cover bottom with: 4-5 apples, peaches, or pears
Sprinkle fruit evenly with: 1/3-1/2 c. Sucanat or maple syrup sprinkles
Bake fruit for 10 minutes while preparing the batter.
Cream together: 1/3 c. each butter and honey
Whip in: 1 egg, 1 c. water, 1/4 c. kefir cheese (or cream cheese), 1 tsp. vanilla
Continue whipping and add: 1 1/4 c. Summers Sprouted Spelt Flour, 1/4 c. tapioca flour, 1 tsp. baking powder
Pour batter over cooked fruit and spread evenly.
Bake at 350 degrees for 30-35 minutes or until toothpick comes out clean.
