Crepes

Ingredients
  

  • 1/2 c Summers Organic Sprouted Spelt Flour 
  • 1 - 2 tsp Sucanat or maple sugar 
  • 7/8 c thinned yogurt (1/2 water)
  • 1/2 tsp melted butter
  • 2 eggs, separated

Instructions
 

  • Separate 2 eggs and beat whites stiff.
  • Mix in a separate bowl:  1/2 c.  Summers Organic Sprouted Spelt Flour, 1-2 tsp. Sucanat or maple sugar 
  • Add in and mix: 7/8 c. thinned yogurt (1/2 water), 1/2 tsp. melted butter , egg yolks
  • Fold egg whites into batter.
  • Pour a 1/4 c. batter into a hot pan and 'swirl' batter around until crepe is thin and evenly dispersed. Turn down heat. Cook until first side is  light brown; flip; cook second side. 
  • Stuff - jam, cream cheese, meat - & roll, pour on syrup or use nothing!
