Separate 2 eggs and beat whites stiff.
Mix in a separate bowl: 1/2 c. Summers Organic Sprouted Spelt Flour, 1-2 tsp. Sucanat or maple sugar
Add in and mix: 7/8 c. thinned yogurt (1/2 water), 1/2 tsp. melted butter , egg yolks
Fold egg whites into batter.
Pour a 1/4 c. batter into a hot pan and 'swirl' batter around until crepe is thin and evenly dispersed. Turn down heat. Cook until first side is light brown; flip; cook second side.
Stuff - jam, cream cheese, meat - & roll, pour on syrup or use nothing!
