Whisk together: 3 c. Summers Sprouted Spelt Flour , 3 Tbsp. Sucanat or maple sugar, 1 1/2 tsp. baking powder, 1 1/2 tsp. baking soda
In a separate bowl, mix well: 3 c. buttermilk, kefir milk or diluted kefir cheese, 8 Tbsp. cooled, melted butter, 3 egg yolks
Add liquid mix to flour and mix well.
Whip 3 egg whites until stiff. Fold into batter.
Pour 1 Tbsp. of batter onto medium-hot griddle or pan using ghee (butter will burn) or grapeseed oil to grease.
Cook for 1-2 minutes, then add blueberries (1 c. for whole recipe) over top before flipping and cooking other side.
Makes about 40 pancakes.
