Best Sprouted Blueberry Pancakes

Ingredients
  

  • 3 c Summers Sprouted Spelt Flour
  • 3 tbsp  Sucanat or maple sugar
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 3 c buttermilk, kefir milk or diluted kefir cheese
  • 8 tbsp cooled, melted butter
  • 3 eggs, separate yolks and whites
  • 1 c blueberries

Instructions
 

  • Whisk together:  3 c. Summers Sprouted Spelt Flour , 3 Tbsp. Sucanat or maple sugar, 1 1/2 tsp. baking powder, 1 1/2 tsp. baking soda
  • In a separate bowl, mix well: 3 c. buttermilk, kefir milk or diluted kefir cheese,   8 Tbsp. cooled, melted butter, 3 egg yolks
  • Add liquid mix to flour and mix well.
  • Whip 3 egg whites until stiff. Fold into batter.
  • Pour 1 Tbsp. of batter onto medium-hot griddle or pan using ghee (butter will burn) or grapeseed oil to grease. 
  • Cook for 1-2 minutes, then add blueberries (1 c. for whole recipe) over top before flipping and cooking other side.
  • Makes about 40 pancakes.
