Cream together:
1/2 c. soft butter
3/4 c. Sucanat
3 Tbsp. molasses
Add and mix well:
1 1/2 c. applesauce
1 egg
1 tsp. lemon extract
Add and mix lightly:
2 c. Summers Sprouted Spelt Flour
2 tsp. baking powder 3/4 tsp. cinnamon
1/2 tsp. nutmeg 1/4 tsp. cloves
Add 1/2 c. each:
– chopped walnuts, cut up raisins
Spread in greased and floured 8 x 8 or 8 x 12 pan or muffin cups.
Bake at 325 degrees for 40-45 minutes for large pan or 25 minutes
for muffins.
Applesauce Cake
